Jamaican chicken wings with candied orange

You can replace chilli pepper with bell pepper. The marinade featuring in this recipe is called “jerk” in Jamaica, where the ingredients and the way it is prepared vary from home to home. Just like the recipe of the real Hungarian fish-soup. This recipe comes from Bob Marley, who prepared jerk chicken wings in a party thrown with the members of one of London’s soccer teams after a match.

Either in a food processor or in a mortar, mix the ingredients for the marinade until pulpy.

Add the chicken wings to the marinade and refrigerate with a cover on for 4 hours or even overnight. In the meantime, toss or stir it every once in a while.

Roast the chicken wings over glowing charcoal or in the oven at 190 °C, while regularly flipping them.

Cut the oranges into slices, dip their meat side into cane sugar and roast along with the chilli pepper.

Serve with fresh salad.

 

Ingredients
  • 12 chicken wings
  • 2 tablespoons of cane sugar
  • 2 oranges
  • 5 pieces of mild red chilli peppers
  • for the pickle:
  • the green parts of 2 spring onions
  • 1 chilli pepper
  • a piece of ginger (3 cm)
  • 2 tablespoons of thyme leaves
  • 1 dl cider vinegar
  • 3 tablespoons honey
  • 2 teaspoons grilling spice blend (available kitchen ready)
  • 1 teaspoon ground cinammon
  • 2 tablespoons olive oil
  • salt, pepper
